Sunday Night Delight - Chole Bhature

I was visiting my aunt in the UK this summer and both of us were fed up with eating at restaurants. Since my aunt is a very nice cook, I told her to cook something desi for the dinner. Upon brainstorming and shortlisting options, we finally decided to make Chole Bhature. This dish, Chole Bhature also known as Chana Bhatura, is one of the famous Punjabi dishes liked and enjoyed all over Pakistan and India. Chole is a spicy yet tangy chickpea curry while Bhatura is a very soft and fluffy fried puri. It is definitely a mouth-watering and absolutely delicious dish. This entire meal can be served at any time of the day, people mostly consume it for breakfast. You can eat Chole with Naan, Aloo Paratha too but for me, Chole with Bhature is the best. Midnight Munching


It’s midnight, you’re extremely hungry, no restaurant is going to deliver any food to your house, the dinner leftovers are just some curries that you cannot eat on their own, your mother has slept so has your house help. What do you do now? Well, I have the perfect solution to your problem. Today I will tell you some quick and easy recipes that you can make to satisfy that 12 am craving. These snacks are so good you would want to make them all day. 

Pizza fries 

Ingredients 

  • Frozen fries ( or make fries of 3 potatoes) 
  • Knns tender pops (you can use any form of chicken) 
  • Tomato ketchup 
  • Chilli garlic ketchup 
  • Mayonnaise 
  • Thousand island sauce 
  • Buffalo sauce 
  • Mozzarella cheese 
  • Mixed herbs 
  • Chilli flakes 


Directions 

  • You need to start by deep-frying your fries 
  • While your fries are frying, take a frying pan and cook your tender pops
  • Take your fries out on a kitchen towel to get rid of extra oil 
  • Transfer your fries to a medium-sized frying pan
  • Start by adding mayonnaise to the fries 
  • Then one by one add all the sauces. The quantity depends on your taste. If you like them spicy add a tablespoon of buffalo sauce otherwise one teaspoon would do
  • Once you have added all the sauces, add in your tender pops
  • Generously add grated mozzarella cheese 
  • Sprinkle some herbs and chilli flakes 
  • Now place your frying pan on low heat and cover it from the top 
  • You need to keep a close eye on it otherwise the fries will start to burn 
  • Once the cheese has melted and you hear a sizzling sound that means your pizza fries are ready. 
  • Dig right into the frying pan and enjoy these flavourful fries. 


Spicy instant noodles 


These aren’t your ordinary noodles. These are instant noodles with heat to them. 

Ingredients 

  • Knorr chatpata flavour 
  • 1/4 teaspoon Buffalo sauce / tabasco sauce 
  • 2-3 drops of Oyster sauce 
  • 1-2 teaspoon Peri peri sauce (any flavour you have)
  • As per taste Chilli garlic ketchup 
  • 1 Green chilli chopped


Directions

  • Take your knorr noodles and crush them into small pieces 
  • Take a microwave-safe bowl and add the broken noodle cake 
  • Fill a little less than half of a bowl with water
  • Add in the spices available in the pack of noodles 
  • Add 2 drops of oyster sauce 
  • Put in the remaining sauces. You can add in more chilli garlic if you like a sweet tangy flavour. 
  • Mix the ingredients 
  • Place the bowl in the microwave for 5 minutes 
  • Stir the noodles again after they are cooked 
  • Sprinkle some green chilli 
  • This is the perfect companion for your Netflix. 


Penne Pasta 

Pasta is one of the easiest dishes to make and is also really quick. This is a very simple pasta with basic ingredients. 

Ingredients 

  • 2 cups pasta 
  • 3 tablespoon Pasta sauce (substitute described in the recipe)
  • 1/2 teaspoon Salt 
  • 1 teaspoon Pepper  
  • 1 teaspoon red chilli flakes 
  • 3 teaspoons chilli garlic ketchup 
  • 1 chopped garlic clove 
  • 2 tablespoon oil


Directions 

  • Start by adding water in a big saucepan (you can use tap water) 
  • Add a pinch of salt
  • Drizzle some oil and let it come to a boil 
  • Once the water starts to boil, add in pasta and let it boil for 20 minutes on medium heat 
  • Once your pasta has boiled, using a strainer get rid of the water and run cold water over the pasta 
  • Now take a saucepan, add in oil and garlic on low heat
  • Once the garlic starts to turn golden add in pasta sauce. If you don’t have pasta sauce you can blend tomatoes, herbs, chilli powder, a pinch of salt and pepper together and that will give you homemade pasta sauce 
  • After that add in chilli garlic ketchup and all the spices and let the sauce simmer
  • Once the sauce starts to thicken, turn off the heat, add in the pasta and give it a good mix 
  • Sprinkle some parsley on top and Voilà! Your pasta is ready 


Pita bread pizza 


Ingredients

  • Pitta bread 
  • Pizza sauce (you can substitute it with chilli garlic ketchup) 
  • Buffalo sauce
  • Mozzarella cheese 
  • Chicken bites 
  • Oregano
  • Garlic powder 
  • Chilli flakes 


Directions 

  • Start by preheating your oven to 180 degrees Celsius
  • Toast the pitta bread until they turn slightly brown
  • Layer them with pizza sauce 
  • Add in buffalo sauce 
  • Next, you need to add any chicken available at your house, be it leftover from dinner or any frozen one. You can make a Margherita pizza.  
  • Cover the entire thing with grated mozzarella cheese, the cheesier the better 
  • Finish it off by putting garlic powder, oregano, and chilli flakes on top
  • Bake it for 5-7 minutes until the cheese melts 
  • And enjoy your 10 minutes of pizza at home
