Sunday Night Delight - Chole Bhature

I was visiting my aunt in the UK this summer and both of us were fed up with eating at restaurants. Since my aunt is a very nice cook, I told her to cook something desi for the dinner. Upon brainstorming and shortlisting options, we finally decided to make Chole Bhature. This dish, Chole Bhature also known as Chana Bhatura, is one of the famous Punjabi dishes liked and enjoyed all over Pakistan and India. Chole is a spicy yet tangy chickpea curry while Bhatura is a very soft and fluffy fried puri. It is definitely a mouth-watering and absolutely delicious dish. This entire meal can be served at any time of the day, people mostly consume it for breakfast. You can eat Chole with Naan, Aloo Paratha too but for me, Chole with Bhature is the best. Breakfast creamy mushroom crepes - Recipe


On Sunday morning my go-to breakfast is halva poori but today for some reason my father didn't go to go and get it. I was very sad about it because Sunday breakfast is my favorite. After all, it is something other than plain, boring eggs. I was hungry because the night before I didn't have proper dinner. Since, I was starving, I decided to go with my only option which was eggs and bread. When I went to the kitchen, I saw my mother making pancakes, she asked me if I wanted to eat them, but I was not in the mood for something sweet. And instantly it clicked that in groceries yesterday my mother brought mushrooms so I can use them to make something delicious. Upon thinking for 5 minutes, I decided that I'm going to make creamy mushroom crepes. I have made pancakes but never crepes. I watched a few YouTube videos, but they were teaching very complicated stuff I decided to wing it. and because my experimental recipe turned out delicious, I thought to share it here. So here is my take and an easier way to make creamy mushroom crepes. 

Ingredients:

For crepes 

  • 1 egg
  • 5 tablespoon All Purpose Flour 
  • ½ cup milk 
  • ¼ cup water 
  • Pinch of salt 
  • Dash of mixed herbs 

For the filling 

  • 1 packet cream 
  • 1 cup diced mushrooms 
  • 1 teaspoon butter 
  • 2 cloves of garlic minced 
  • 2 slices of cheddar cheese 
  • 1 teaspoon mixed herbs 
  • 1 teaspoon black pepper 
  • ¼ teaspoon salt 
  • ½ teaspoon red chili flakes 
  • ½ teaspoon paprika 
  • ½ teaspoon parsley 
  • 1 tablespoon parmesan cheese 

Directions :

  • Take a medium sized bowl, add in flour, salt and mixed herbs and using a whisk gently combine it
  • Take another bowl for your wet ingredients. Break in the egg, add in the milk mix it well again with the help of a whisk
  • Once both the mixtures are complete, slowly add in the wet mixture into the dry mixture and continuously whisk it. After all the mixture has been added it will still be a little stiff, therefore you need to add in the water because the mixture needs to be silky smooth and have a thin consistency. Keep adding in water until the consistency has been achieved
  • Now, we need to make the filling for that take a pan, in it add few drops of oil and garlic. On low heat, mix it for a minute and then add in the mushrooms.
  • Next, you need to add the spices to give mushrooms a nice flavor. Add in chilli flakes, paprika, salt, pepper, herbs, and sauté the mushrooms. 
  • Once the aroma fills your kitchen, add in the cream and mix it all well
  • The sauce will start to thicken, therefore you need to add in milk as much as required.
  • Now, it's time to season the sauce. Add in both cheddar and parmesan cheese and parsley for garnish
  • Once the filling is made, you need to move to making the crepes.
  • Start off by taking a small nonstick pan and add a small amount of the batter in the center of the pan and using a spatula spread the batter all around the pan. This is because crepes are very thin. 
  • Once your crepes are prepared, put them on a plate and generously fill them with the filling and enjoy this delicious breakfast treat.
