Sunday Night Delight - Chole Bhature

I was visiting my aunt in the UK this summer and both of us were fed up with eating at restaurants. Since my aunt is a very nice cook, I told her to cook something desi for the dinner. Upon brainstorming and shortlisting options, we finally decided to make Chole Bhature. This dish, Chole Bhature also known as Chana Bhatura, is one of the famous Punjabi dishes liked and enjoyed all over Pakistan and India. Chole is a spicy yet tangy chickpea curry while Bhatura is a very soft and fluffy fried puri. It is definitely a mouth-watering and absolutely delicious dish. This entire meal can be served at any time of the day, people mostly consume it for breakfast. You can eat Chole with Naan, Aloo Paratha too but for me, Chole with Bhature is the best. Best Lemon Loaf - Recipe

 



If you are looking for something sweet with your evening tea, this lemon loaf is the perfect sweetness you can add to your evening. It's the ideal balance between sweetness and tanginess. This extremely moist and fluffy pound cake is super easy and fun to make and it will surely become an essential for your evenings. So get your oven mitts out, put some water in your kettle, take out your favourite teabag, invite your friends and enjoy this super delicious tea cake with them.



Ingredients

For the loaf:
  • 1 1/2 cups All Purpose Flour 
  • 1 teaspoon Baking Powder
  • 1 cup Caster Sugar
  • 1/2 cup Butter
  • 1/2 cup milk 
  • 2 eggs 
  • 1 lemon's zest 
  • 1 lemon's juice
  • Pinch of salt
For the icing: 
  • 1 pack cream 
  • 1/2 cup icing sugar 
  • 1/4 cup milk 
  • 1 teaspoon vanilla extract 
Instructions
  • Preheat your oven to 180 degrees for 15 minutes
  • While your oven is preheating, line your loaf pan with baking paper or you can grease it with butter and put that aside 
  • You will now need 2 medium to big sized bowls
  • In one bowl add your dry ingredients; flour, baking powder, lemon zest and salt 
  • In the other bowl add the wet ingredients
  • Add in your butter and sugar ; using an electronic mixer beat them on medium speed until creamy texture forms. It will take about 5-6 minutes and the mixture will start to get a pale colour (do not over beat)  
  • Using a spatula scrap the edges of the bowl and add in the eggs one by one while gently beating it. 
  • Then add in vanilla extract and lemon juice then give a final mix 
  • You can turn your mixer off now and grab your spatula 
  • Now slowly add in the dry ingredients mix in the wet mix while folding it in 
  • Once all the mixture is added the mixture might be hard to fold, now add the milk and gently fold it all in and make a smooth mixture 
  • Pour in your mixture into the pan and slide it in the oven at 180 degrees let it bake for 20-30 minutes depending on the oven settings you have set 
  • While the loaf is in the oven prepare the icing 
  • In a bowl add the cream, icing sugar, vanilla and start beating it using the electronic mixer 
  • Gradually add in the milk until you get the desired consistency
  • Put it in the fridge to cool 
  • Take the loaf out and let it cool 
  • Once cooled, pour on it the icing generously 
  • Use dried lemon to decorate the loaf and give it that professional look 
  • Sprinkle some icing sugar on top  
Enjoy it with some hot tea!




Tips
  • Don't add the eggs directly into the mixture, crack them open in a small bowl. This way if you get a bad egg it won't ruin your entire dish.
  • Check the sourness of your lemons before adding them in, if it's too sour even a teaspoon would cause a bitter taste.
  • Once you add your mixture in the pan, tap the pan a few times on the kitchen counter to avoid air bubbles.
