Sunday Night Delight - Chole Bhature

I was visiting my aunt in the UK this summer and both of us were fed up with eating at restaurants. Since my aunt is a very nice cook, I told her to cook something desi for the dinner. Upon brainstorming and shortlisting options, we finally decided to make Chole Bhature. This dish, Chole Bhature also known as Chana Bhatura, is one of the famous Punjabi dishes liked and enjoyed all over Pakistan and India. Chole is a spicy yet tangy chickpea curry while Bhatura is a very soft and fluffy fried puri. It is definitely a mouth-watering and absolutely delicious dish. This entire meal can be served at any time of the day, people mostly consume it for breakfast. You can eat Chole with Naan, Aloo Paratha too but for me, Chole with Bhature is the best. Homemade Pancakes





Weekends are incomplete without fluffy homemade pancakes and a warm cup of coffee. You will be surprised to know how easy they are. Boxed pancake mix might be convenient for some but there's something very special about making the batter from scratch and eating the fluffy goodness you made. The most amazing thing about pancakes is that you don't need any special ingredients, it's made using very basic ingredients that are always available in your pantry. You can play around with them, add some blueberries or chocolate chips. You can also make chocolate pancakes with the same recipe by adding just bit off chocolate in it. Trust me when I say this recipe will really brighten your weekend mornings and will fill your kitchen with the beautiful aroma. So, if you are like me and you don't want eggs to be the first thing you eat as you wake up, these pancakes will be the best alternative you can get. Not only are they so convenient but also fun to make using different toppings, different fruits, syrups, or you can have them as they are. Even if you're not a great chef this recipe is so simple that you will ace it the first time you try it. 

Ingredients 
  • 2 eggs
  • 1 cup flour 
  • 1 teaspoon baking powder 
  • 1 teaspoon vanilla extract 
  • 4-5 tablespoon icing sugar 
  • ¼ cup milk 
 
Instructions
  • Take two bowls, one for your dry ingredients and one for the wet
  • In the first bowl, add in the flour, baking powder and mix it well
  • Now separate your egg yolks and egg whites
  • In another bowl, add the egg whites and add 2 tablespoons of your icing sugar
  • Take your electronic mixer, beat the egg whites and the sugar on medium speed
  • Then, slowly add in the remaining sugar and turn the speed of your mixer to high
  • You're going to keep mixing it until stiff peaks form
  • Once your egg whites are ready, set them aside
  • Add your egg yolks in the dry mix along with vanilla extract and using a whisk mix it until it's combined
  • The batter will be dry and difficult to mix 
  • With some intervals add in the milk, making the batter smooth
  • The batter should not be very liquid at this point 
  • Once your batter is mixed, using a spatula very carefully fold your egg whites into the batter
  • Make sure you fold them with a spatula and not with the whisk
  • Take a nonstick frying pan and put it on medium heat
  • Add a little bit of oil and let the pan get hot
  • Take a small ladle and pour your mixture on the pan
  • You don't have to spread the batter instead you have to keep a thickness of about a centimeter
  • Cover the pan with the lid for 20 seconds
  • When you take the lid off small bubbles should form on the pancake, while the batter around it would still be wet
  • This is when you flip the pancake and cover it again for about 20 seconds
  •  The pancake would be cooked by now, but if it's still uncooked you can leave it in the pan for a few seconds without the lid 
  •  This batter would make around 6-7 pancakes


Stack the pancakes on a plate, cut your favourite fruit put it on your pancakes, drizzle some Maple syrup and enjoy while the goodness melts in your mouth!
